Quick and Easy Three Bean Salad
This is a super quick salad you can whip up for a delicious and healthy lunch. There is so little effort involved and the best part is – not too much washing up.
To make my three bean salad I took a can of three bean mix (you can use four bean mix if you like) and gave them a good wash in a colander.
Then I chopped up a couple of slices of bacon into little pieces and cooked them in a frying pan with some olive oil.
I tossed my beans in the frying pan for a minute or so, just to take the edge off that straight-from-the-can taste canned beans sometimes come with.
Then I placed the the beans and bacon in a bowl with some chopped cherry tomatoes, torn basil and some salt and pepper.
To dress your salad, you could probably use any dressing you have in your cupboard or fridge (balsamic maybe?). I whipped up my own dressing with a couple of tablespoons of red wine vinegar, a tablespoon of olive oil and a clove of garlic, crushed (more or less).
In hindsight, I’d probably cook the garlic in the frying pan with the bacon because I’m not a massive fan of the taste raw garlic leaves behind.
But all in all – a super delicious, healthy and filling lunch.
Would I make it again? Definitely. Lunch tomorrow maybe?
