DIY Pizza Inspiration: Proscuitto, Mushroom and Goats Cheese

If your appetite is as big as mine, one pizza is never enough.  The night Boyfriend and I made Bresaola and Caramelised Tomato Pizza, we also made a proscuitto one.

This pizza was just as delicious.

I’m not going to lie. We polished both pizzas off in one sitting.

What did we do?

To make this pizza, we covered a base (shop-bought again – I’ll make it from scratch next time, promise) with pizza sauce.

Then we added some sliced up bocconcini and sliced up goats cheese.  We found a hard goats cheese in an Italian deli and decided to give that a go. Needless to say, it was really, really good.

Then we covered the whole thing with thickly sliced portobello mushrooms.  We sprinkled a good helping of thyme over the mushrooms and drizzled with olive oil.

We then popped the pizza in the oven (at 180 degrees) for about ten minutes.

Then we added prosciutto all over the top of the mushrooms and popped the pizza back in the oven for a further five minutes. (We didn’t want the prosciutto to be super cooked or super raw).

And that’s all there was too it!

So quick, easy and, most of all, delicious!

Would I make again? Absolutely.
